Ingredients
- 1/2 cup Chia seeds
- pinch Salt
- 300 mls Coconut milk
- 100 mls Coconut water
- 1/3 teaspoon Vanilla essence
- 1 tablespoon honey

Instructions
- Mix coconut milk and coconut water with salt, vanilla and honey.
- Add chia seeds and stir well
- Poor into either small ramekins or a large bowl
- Give with cling wrap and refrigerate for at least two hours (I think overnight is best).
Recipe Notes
- The proportion is 4 tablespoons of chia seeds to the fluid so can be flexible with coconut milk/water - even juice would work.
- Blueberries, passionfruit, banana or mango are great accompaniments.
- For the children experiment with poached rhubarb or poached quince.
- Fruit can be layered in the puddings or served on top.
- The quantity of honey can vary to taste.
- They can be for breakfast or as a dessert.
