The humble scone is overshadowed by the delights of the Parisienne Patisserie. However it is low in sugar and fat, can be dressed up beautifully with butter, honey jam and cream. A batch of 12 can be prepared in no time at all.
Ingredients
- 2 cups self raising flour
- 1 tsp Baking Powder a generous teaspoon
- 1 tbsp sugar
- 300 ml fluid the Shand-Kimber family typically use 60ml cream, the juice of a lemon and the balance is milk or buttermilk.

- Preheat oven to 225 degrees Celsius
- Dissolve sugar in the 300 ml of fluid
- In a deep bowl mix the flour and baking powder
- Make a well in the centre of flour and pour in the fluids and mix together
- Tip onto a floured surface and quickly knead before patting into a dough about 2.5cm thick
- Cut with 60mm cutter to form scones
- Place on baking tray quite close together and bake for 10 minutes
